4-lb. Bass fillets, (6-oz. each), remove skin
1 tablespoon butter, softened
4 thin onion slices (red best)
1/8 teaspoon salt
1/8 teaspoon white or lemon pepper paprika
Grease the centre of a sheet
of strong aluminium foil with butter, arrange 2 slices each of red onion
and lemon over the butter. Arrange the fillets in a single layer over the onions,
lemon.
Top with remaining onions, lemon.
Sprinkle lightly with salt, pepper and paprika.
Fold the sides of the foil together, seal tightly. Place the packet directly on the cooking
grill. Grill,
covered, for 12 minutes, or until the fish is firm, and just begins to flake. |
